Broken Emmer Wheat is obtained from whole emmer grains. It is simply stripped of the chaff by breaking each grain into several parts and subsequently adjusted in size with a special machinery. Broken emmer requires 10 minutes less to boil than whole emmer and does not require soaking. After cooked it takes on the consistency of semolina. Externally it has an amber light brown color.

Ingredients:
250g broken spelled (no need to soak), 60 g of thick sliced ham , 1 potato, 1 leek, 1 onion, 1 carrot, 1 celery stick, 1 bay leaf, 150g of tomato sauce, extra virgin olive oil, salt, pepper in grains, Parmesan chees.
Directions:
Prepare a mix with onion, celery and carrot. Remove the first leek peel, divide it in half vertically leaving, wash it under running water and slice it finely. Peel the potato, cut it into cubes and keep it (waiting) immersed in water. Heat the oil in a heavy-bottomed saucepan and add the vegetables and the chopped ham. Let the pan in a soft fire for about ten minutes. At this point combine the tomato sauce and the bay leaf and cook again for 10 minutes. Pour about a liter and a half of hot water into the saucepan and, when the boil begins, add the potato and the cracked emmer , mix and regulate salt. Let it cook for about 20 minutes, stirring occasionally and at the end, complete the seasoning with a generous amount of pepper. Serve the soup hot, and if you wish accompanied with parmesan cheese.
