500g pearl Emmer (not soaking needed), 250g rocket, Cherry tomatoes, Drained olive oil tuna, Drained black olives, Drained artichokes in oil, Extra virgin olive oil to taste, Vinegar, Sale.
Directions:
Let’s boil the Pearl Emmer for 30 minutes, as soon as it is cooked, drain it and let it cool. In the meantime, cut the tuna, black olives and artichokes and pass them in a sieve. Then wash the tomatoes and the rocket and cut them into small pieces. Mix everything with the emmer, adding extra virgin olive oil, vinegar and salt. The ingredients of this recipe can be used according to personal tastes.
