The decorticated lentil is obtained from a process of decorticating the seeds of whole lentils by removing the outer skin. It is a legume suitable for feeding children and the elderly precisely because it has no peel and is a light and digestible food.

250 g of shelled lentil (no need to soak), 160 g of cherry tomatoes, 1 carrot, 1 clove of garlic, Extra virgin olive oil, Parsley, 4 glasses of water, Salt and Pepper.
Wash the tomatoes and the carrots, after cut them into small pieces. Put in a rather large pan oil and a clove of garlic, let it brown. Add the small pieces of tomatoes and carrots and let brown for a few minutes on moderate heat. Put the drained lentils and 1 tablespoon of parsley in the pot. Season for a few seconds, turn over medium heat. Lower the heat and add 2 glasses of water. Leave to cook on low heat for about 20 minutes. After the indicated time, the lentils described doubled their volume and absorbed the water, remove the lid and add 2 more glasses of water and salt. Cook again 8′-10 ′ on low heat, making sure that the mixture always remains liquid, the lentils (now cooked and slightly darker in color) must have the necessary compactness to be blended without be too rich. Turn off the heat and pass the mixture in the mixer or blender, until the lentils and vegetables are completely transformed into a smooth and velvety cream. When see that the cream is too thick, add 1-2 tablespoons of water, on the contrary, if you consider that the consistency is too liquid, put it back on the stove for 1′-2 ′. If this is a dish, for children it is good to put aside their portion without adding pepper and herbs but only with a little of extra olive oil. For adults Adds a minced black pepper. For each dish add a pinch of fresh parsley and a drizzle of extra virgin olive oil.
