Sausage 500g, Boron beans Lamon 250g (Soak for 12 hours), Golden onions 70 g, Red wine 50 g, Tomato sauce 500 g, Rosemary to taste, Sale up to q.b., Black pepper, Extra virgin olive oil.
To prepare Lamon Beans and sausage you have to start soaking the borlotti for 12 hours. The next day drain the beans and then pour them into a large saucepan. After cover with cold water and bring to boil. As soon as the water is at temperature, low the flame until it boil slowly and cook for about 90 minutes; salt only at the end of cooking. Clean the onion and chop it with a knife and then pour the onion in a pan with olive oil and cook over low heat for 6-7 minutes. Then add the sausages and leave to brown for 3-4 minutes, stirring occasionally to burn the bottom not far away. Put a little bit of the wine and when the alcohol has evaporated ,add the sprigs of rosemary and the tomato puree. Sales rule and pepper and cook for 35-40 minutes on low heat. After the indicated time, drain the cooked beans and add them to the sauce, continuing cooking for another 10-15 minutes, then mix the flavors well.
