500g Casciana soup (soak for 12 hours), 500 g of pork ribs, 250g of tomato sauce, 1 onion, 1 celery stick, 1 clove of garlic, 1 chilli pepper, 1 pinch of parsley, Meat broth (alternatively in powder), 1 glass of extra virgin olive oil, Sale to taste.
After soaking the Casciana soup for 12 hours, put it in a pan and boil it for at least 90 minutes. In the meantime, brown the pork ribs. In another pan we put the onion, celery and garlic and let it cook, then add the tomato, chilli pepper and parsley and let it cook for about 10 minutes. Finally we add the drained soup, the short ribs and cook everything for about an hour, adding meat broth from time to time. Taste and add the sale if necessary.
