500g of mountain soup (no need to soak), 300 g of peeled tomato, 100 g of smoked bacon, pecorino cheese, 2 cloves of garlic, 1 red onion, Parsley, thyme, Basil, 1 liter of meat broth, Salt and Pepper To Taste, extra virgin olive oil to taste.
We chop the bacon and cook it in oil together with the minced garlic and onion. Let it cook for 10 minutes, stirring constantly. Add the thyme, basil, parsley and chopped tomato. Then add the mountain soup, and make it toast. Cook for about 30 minutes adding hot water. Salt and pepper. We serve warm soup seasoned with extra virgin olive oil and chilli pepper.
